Ingredients
- 5 cups water
- 1 1/2 cup long grain rice, uncooked
- 1 cinnamon stick
- 1 cup milk
- 1 cup sugar
- 2 teaspoons pure vanilla extract
- 1 cup freshly brewed espresso
- frothed milk or whipped cream, for topping
- cinnamon for sprinkling
Instructions
- Pour the rice, cinnamon stick and 2 cups of water into a blender, blend until rice is finely ground, about 2 minutes. Add the rice mixture and the rest of the water and soak at room temperature for at least 4 hours, overnight is best.
- Strain the rice water into a pitcher and discard the rice. Stir the milk, sugar, and vanilla into the rice water.
- Divide the horchata among ice-filled glasses and pour about a 1/4 cup espresso over the horchata and top with frothed milk or whipped cream and cinnamon.
